Why does my Kombucha and Cascara drink need to be kept chilled?

For Kombucha, it's to prevent over fermentation, which means you'll get an over-acidic Kombucha and a build-up of pressure.
Whereas for Cascara, it tastes best when consumed chilled. There's nothing stopping you from trying it at room temperature, though :)
